Chickpea & Quinoa Salad

Ingredients

1 can of drained and rinsed Chickpeas
1 cup uncooked Quinoa
2 cups Water
1 medium Cucumber finely chopped
1 medium Red Capsicum, finely chopped
1 cup finely shopped Red Onion
2 medium finely chopped Tomatoes
1 cup of finely chopped flat Parsley
150g canned Corn Kernels
100mls tar10 Traditional French Vinaigrette

Method

  • Rinse Quinoa and place in a small saucepan with water
  • Bring to the boil, then simmer gently until water is evaporated
  • Fork up to break up the grains
  • In a large bowl, add all other ingredients
  • Mix well and toss through
  • Add salt and pepper to taste
