- 1/2 cup of Tar10 Red Belly Chilli & Tomato Jam
- 500g chicken mince
- 1x 310g can red kidney beans
- 1/2 punnet fresh halved cherry tomatoes
- 4 x flour tortilla wraps
- 1/2 cup sour cream
- Cos lettuce
- Fresh chopped coriander to garnish
- Guacamole to serve on the side
Heat 2 tablespoons of oil in a fry pan or wok. Brown and toss 500 g chicken mince
until cooked. Set aside.
In a bowl combine 1/2 cup RED BELLY CHILLI AND TOMATO JAM with 1/4 cup
water and a 310 g can rinsed and drained Red Kidney Beans.
Return chicken, a handful of halved cherry tomatoes and the bean mixture to the
pan, cover and simmer for 5 minutes. Meanwhile warm 4 wraps in the oven.
Stir 1/2 cup sour cream into the chicken. Line the wraps with Cos lettuce leaves and
divide over the chicken filling, sprinkle with chopped parsley or coriander and fold
or roll up.
Serve with Guacamole and a salad.
You can use tortillas, mountain bread, pita bread or tacos.
