Potato Pancakes with Ploughmans Pickle


500g Red Potatoes

1 xclove garlic

1x small onion finely diced

1x chopped shallot

1 egg lightly beaten

1/2 cup finely chopped parsley

300g rocket

1/4 cup breadcrumbs

1/2 cup vegetable oil

1x jar of Tar10 Ploughmans Pickle



Peel and grate potatoes, squeeze firmly with hands to remove extra moisture and put into a bowl. Stir in garlic, onion, shallot, breadcrumbs, parsley. Season with Salt and pepper if desired. Heat oil to medium high in a large frypan. Add large spoonfuls of mixture into the pan and flatten slightly. Cook 3-4 minutes on each side or until golden and cooked through. Drain on paper towels and keep warm while cooking remainder.

Arrange on a bed of rocket and serve with a dollop of Ploughmans Pickle on each Potato Pancake.
